INGREDIENTS:


8 oz râw bâcon
2 lbs ground beef 85%-15% leân to fât râtïo
1 yellow onïon
1 green bell pepper
1 red bell pepper
2 jâlâpeno peppers
4 lârge gârlïc cloves
14 oz cân dïced tomâtoes
4 oz tomâto pâste
16 oz cân pïnto beâns (or kïdney beâns)
1 cup beef broth
2 1/2 tsp cumïn
2 tsp drïed oregâno
2 tsp smoked pâprïkâ
2 tbsp âncho chïlï powder
sâlt

INSTRUCTIONS:


1. Prepâre ïngredïents âheâd of tïme by dïcïng bâcon, onïon, ând peppers.

2. Preheât â 2.5-3 quârt pot over medïum heât ând âdd â lïttle bït of oïl.

3. Add dïced bâcon ând cook untïl browned ând fât ïs rendered.

4. Add ground beef, seâson wïth some sâlt, ând cook, breâkïng up âll the clumps of meât, untïl ït's browned. Tâke meâts out of the pot ând set âsïde.

5. Add dïced onïon ând bell peppers to the pot ând sâute untïl softened. Add dïced jâlâpeno.

6. Smâsh ând mïnce gârlïc ând âdd ït to the pot. Sâute untïl gârlïc ïs frâgrânt.

7. Add meâts bâck to the pot, stïr, ând âdd dïced tomâtoes, tomâto pâste, beâns, ând beef broth. Stïr well.

8. Add âll the seâsonïng, stïr, set heât to low. Cover wïth â lïd ând cook for âbout 1.5-2 hours, stïrrïng once ïn â whïle. Tâke the lïd off hâlf wây through ând cook the rest of the tïme uncovered.
